Celebrate the Chinese Lunar New Year with this delicious Tangerine Firecracker Shrimp dish and bring good luck to your home at the same time! In many regions of China, the word for ‘tangerine’ sounds very similar to the word for luck. During Chinese New Year, when ripe tangerines abound, you’ll find people gifting tangerines and restaurants cooking dishes with tangerine to bestow good luck. Shrimp are easy to make and satisfying as a meal so you'll wonder why you're not making them more often after trying this dish. Ingredients

  • Tangerine Firecracker Shrimp:

  • 1.5 lbs medium shrimp, peeled & deveined

  • Salt & pepper, to taste (optional)

  • 1/2 cup cornstarch

  • 2 large eggs, beaten

  • 1/4 cup canola (or olive, vegetable, grapeseed) oil

  • 1 green onion, chopped for garnish

  • steamed rice (optional)

  • Sweet and Spicy Tangerine Sauce:

  • 1/2 cup honey

  • ½ teaspoon soy sauce

  • 2 Tbsp freshly squeezed orange, mandarin, or tangerine juice

  • 2 Tbsp Piquant Post Spicy Tangerine blend

Notes

You can use fresh or frozen shrimp. For a quick thaw, soak frozen shrimp in a bowl of water for 10 mins.

For best results, in step 3 combine the juice and tangerine peels first and let soak for 2-3 mins before adding other sauce ingredients. This reconstitutes and softens the peels.

Optional ingredients add a little character and flavor but don't sweat it if you don't have them.

Instructions

In a large bowl, season shrimp with salt and pepper. Add the cornstarch and toss to combine.

In a large saucepan, heat the canola oil. Dip the shrimp in the eggs one at a time and then add them to the pan. Cook over medium heat until golden brown on both sides, about 2 minutes. Transfer to a paper towel lined plate when done.

To make the sauce, combine the honey, soy sauce, orange juice and Piquant Post Spicy Tangerine blend in a medium bowl. Pour into a skillet and bring to a boil. Simmer for 2 - 5 minutes, until thickened.

Drizzle the sauce over the shrimp or toss the shrimp in the sauce to coat them. Serve immediately.

Substitute beef or chicken: You can also make this dish with beef or chicken: cook and cube the meat first and then prepare it according to the instructions (toss in cornstarch, dip in egg and fry in pan) and then drizzle with the sauce.

To make it vegan: Use tofu or cauliflower in place of shrimp.

Spice level: This dish has medium level spice. To make it spicier, add ¼ tsp red pepper flakes. To make it less spicy, use only 1 tbsp of the Spicy Tangerine blend.
