Ingredients

  • 1 cups red beans (cooked or canned) drained

  • 1 cup oat flour

  • 1/2 cup cooked brown rice

  • 1/8 cup nutritional yeast

  • 1/2 large onion, peeled and grated

  • 1 Tbsp Piquant Post Smoky Orange Mezcal spice

  • 1/2 Tbsp mustard

  • 1 Tbsp soy sauce

  • 1/2 Tbsp sea salt

  • Quick Guacamole:

  • 1 avocado, pitted

  • Juice of 1 lime

  • 1 pinch sea salt

  • To serve:

  • 4-6 burger buns, lettuce, sliced onions, BBQ sauce

Notes

The guacamole can be customized according to your taste. Feel free to add additional ingredients such as diced jalapeños, minced cilantro, or a dash of hot sauce to give it an extra kick.

For a lighter option, you can skip the burger buns and serve the red bean patties on a bed of lettuce or wrapped in large lettuce leaves for a lettuce wrap-style burger.

These burgers can be made in advance and stored in the refrigerator for up to 3 days. Simply reheat them in a skillet or microwave before serving.

Feel free to get creative with additional toppings and condiments. Some suggestions include vegan cheese, pico de gallo, cilantro and sliced tomato.


Instructions

Preheat your oven to 350 F. Place all the patty ingredients in a large mixing bowl and combine well. With a potato masher (or your hands) mash everything together well until the mixture is sticky.

Form into patties and bake on a lightly oiled sheet pan (or one lined in parchment paper) and bake for 15 minutes at 350 F. Allow to cool and store in a covered container. 

To prepare the guacamole, scoop out the flesh of the avocado and place it in a bowl. Mix in the lime juice and sea salt and mash until well combined.

To serve the burger, toast the bun and spread both sides with BBQ sauce. Top the patty with the guacamole, lettuce and onions. Serve immediately.

Alternatives & Substitutions

  • You can substitute red beans with other types of beans such as black beans or kidney beans if desired. The texture and flavor may vary slightly, but it will still make a delicious vegan burger.
