This Pollo Guisado Dominicano (Dominican Chicken Stew) recipe is a feast for your eyes and taste buds. Chicken and red onion are marinated in a mixture of lime juice and our Cuban Mojo spice blend to infuse flavor and tenderize the chicken. The chicken is then braised in a stew of sweet and savory bell peppers, olives, and tomato sauce. The Pollo Guisado stew is then served over fragrant jasmine rice resulting in a delightfully tasty and hearty meal. This is a popular dish throughout the Caribbean and Central America. Most families have their own recipe of seasonings called sofrito (or sazón in Dominican Republic) made from a mix of aromatics, tomatoes, herbs, and spices that flavor and customize the dish. 

The term "Guisado" refers to making a stew of braised meat or fish in a tomato sauce with the sofrito or sazón seasoning. Ingredients

  • 2 lbs chicken thighs

  • Juice of 1 lime

  • 1 small red onion, thinly sliced

  • 2 Tbsp Piquant Post Cuban Mojo spice

  • 1 tsp salt 

  • 2 Tbsp olive oil

  • 1 tsp sugar

  • 2 cups water

  • 1 cup tomato sauce

  • 1 green bell pepper, deseeded and sliced

  • 1 yellow bell pepper, deseeded and sliced

  • 1/4 cup of pitted green olives, chopped (optional)

  • 1/4 tsp cayenne pepper (optional for heat)

  • Fresh rice, for serving

  • Fresh cilantro, for garnish

Notes

If you are short on time, you can do a quick marinade in as little as 15 minutes. The marinade also works great overnight if you plan ahead.

You can use bone-in chicken for a richer flavor, but boneless will work great as well.

To add more nutrients add additional vegetables like broccoli or collard greens the last 5 minutes of simmering.

Optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.

Instructions

Season the chicken: Mix the chicken, lime juice, red onion, Piquant Post Cuban Mojo and salt. Marinate for 30 minutes.

In a large pot, heat olive oil over Med heat, add sugar, and heat until it browns, about 1 minute. Add the chicken and sear, about 3 minutes per side (reserving onions for later). Add water, and tomato sauce. Cover and simmer over Med heat for 15 minutes, stirring halfway.

Stir in the marinated red onions, bell peppers, olives, and cayenne pepper. Cover, and simmer until the vegetables are cooked through, about 5 minutes.

Serve hot with fresh jasmine rice, garnish with cilantro. 

Alternatives & Substitutions
