Rich and hearty stews are no strangers to Moroccan cuisine. With their exotic ingredients, bold spices and fiery dried peppers, Moroccan cuisine is at its core fragrant, bright and divine. If you’ve never heard of Loubia, it is a Moroccan white bean stew that is comforting and well loved by locals. This vegetarian dish consists of dried white beans soaked overnight then stewed and simmered in a tomato sauce seasoned with spices like paprika and cumin, fresh ginger and lots of fresh herbs. It is also not uncommon to add meat or poultry to the stew for extra protein and traditional flavor.
Our Chefs curated this recipe for Loubia to use our proprietary Moroccan spice blend that we call Casablanca Blend, that instantly infuses any dish with authentic North African flavor. It contains earthy spices like smoked paprika; cumin seeds for a nutty surprise and coriander for a fragrant lemony flavor, not to mention turmeric and ginger for complexity and a kick of heat from cayenne pepper. Although traditionally this recipe calls for dried beans, canned white beans work perfectly well. Feel free to substitute with chickpeas or even black-eyed peas. Loubia truly exudes the comfort and wholesomeness that is Moroccan cuisine. Enjoy it with toasted baguette brushed with olive oil or on its own as a main dish.
2 Tbsp extra virgin olive oil
1 onion, diced
4 garlic cloves, minced
2 beefsteak tomatoes, chopped (or substitute a 28 oz can of diced tomatoes)
1 Tbsp tomato paste
1 Tbsp Piquant Post Casablanca Blend
1 Tbsp ginger, grated
2 (14 oz) cans white beans, drained and rinsed
2 tsp salt
Black pepper to taste
3/4 cup water
Garnish: chopped cilantro
To serve: 1 baguette, toasted (optional - omit for gluten free)
For a spicier dish, add extra chili powder, cayenne pepper, or diced fresh chilis to taste.
Heat the olive oil in a sauté pan and add the diced onion. Cook for 2-3 minutes or until translucent. Add the garlic, chopped tomato, tomato paste, Piquant Post Casablanca Blend, and grated ginger. Stir well and cook for 2-3 more minutes.
Add the drained and rinsed white beans, salt, black pepper to taste and water to the pot. Bring to a simmer and cook covered for 10-15 minutes until the liquid has reduced and the stew has thickened.
When the stewed beans have thickened, adjust the seasoning with more salt and pepper to taste, and more spices if desired.
Garnish with chopped cilantro and toasted baguette brushed with olive oil.

If you can't find white beans, chickpeas or black-eyed peas can be used as a substitute.
