If you have never tried Moroccan food or only know of couscous, be ready to sample some of the world’s consistently top rated cuisine. Bold and often spicy flavors are seasoned with delicate, complex, and layered spice blends, resulting in aromatic and flavor-packed meals. This recipe for Couscous with Seven Vegetables is seasoned using two North African spice blends. Harissa, a traditionally fiery chili sauce made from ground dried chilis, aromatics and oil. Our version of Harissa is mild to medium heat, making it a great introduction to Moroccan flavors and is easy to ramp up fiery heat to your liking using fresh or dried chilis. This recipe also includes our proprietary Piquant Post Casablanca blend crafted with smoky-savory-aromatic notes. The result is a smoky, sweet, and bright dish with hints of heat.

Our chefs made hearty vegetables the star in this vegan couscous dish, complemented with sweet raisins and mint to create a richly flavored, exotic dish in just over 30 minutes. Couscous is the perfect, traditional foundation of the meal, making it both healthy and hearty. Moroccan couscous is typically cooked in a double-chambered food steamer called a Couscoussier, which consists of two interlocking pots made of ceramic or metal. The double chamber creates steam that reaches the couscous above through a perforated bottom. The larger bottom section can be filled with either water or soup, adding additional flavor. Use our Casablanca recipe in stews, couscous or rice dishes, or with grilled or roasted meats and veggies to add flavor depth to your recipe.

Ingredients

  • 1 cup couscous

  • 2 Tbsp olive oil

  • 1/2 onion, sliced

  • 1 parsnip, peeled and chopped

  • 1 carrot, peeled and chopped

  • 1 small sweet potato, washed and cubed

  • 1 tomato, cut into wedges

  • 1/4 cup raisins

  • 1 zucchini, chopped roughly

  • 2 radishes, chopped

  • 1 tsp Piquant Post Casablanca Blend

  • 1 tsp sea salt

  • 1 tsp Piquant Post Harissa + 1 Tbsp olive oil, mixed together

  • 1/4 cup water

  • 1 tsp agave

  • 1 Tbsp mint, chopped

Notes

The addition of mint boosts the Moroccan vibe when paired with our Casablanca spice blend. Try pairing this recipe with a traditional Moroccan Mint Tea.

Often Moroccan cooks will use a special cooking vessel called a couscoussier to steam the couscous, but it isn’t necessary for this dish to turn out perfectly! Simply follow the easy instructions on the box for home cooks, and voilá! We designed this dish to be extra easy.

Instructions

Cook the couscous according to the package instructions. 

Heat the olive oil over medium low heat in a skillet. Add the onion, parsnip, carrot, sweet potato to the pan. Sauté for 8-10 mins on low until the vegetables are tender. 

Add the tomato, raisins, zucchini, radishes, Piquant Post Casablanca Blend, sea salt, Piquant Post Harissa and oil, water and agave. Stir well and cook 3-5 more mins until the liquid thickens up and the zucchini is tender. Stir in the chopped mint. Season to taste with sea salt and pepper.

Serve the vegetables over the couscous and garnish with more mint.

Ingredients

  • 1 cup couscous
