Tandoori Aloo is a delicious and flavorful Indian dish made by marinating hearty potatoes in a full-flavored, aromatic paste. The potatoes are then air-fried until beautifully-browned and slightly crispy on the outside with a pillowy soft center. In Indian culture Tandoori cuisine (pronounced “tan-daw-ree”) is made using a cooking technique that involves marinated ingredients being cooked over extremely high heat. These ingredients range from meats and fish to vegetables and even baked goods and are cooked in a clay oven known as a tandoor, which has thick walls and a conical lid. A charcoal or wood fire is used to heat the tandoor and creates an extremely hot environment, keeping the food juicy with a pleasantly charred exterior and a distinctive smoky flavor. 

Aloo is a hindi word for the versatile potato. Potatoes are a staple ingredient in many Indian dishes – both vegetarian and meat-based – owing to their wholesome and filling nature. Our Chefs developed a delightful recipe for Tandoori Aloo using our Tandoori BBQ spice blend. This blend contains an array of aromatic spices that enliven the flavor of any dish. Tandoori dishes are usually bright red in color due to added food dye. To replicate that in a natural way, we use dried beetroot that also adds another layer of earthiness to our proprietary blend. Add or substitute vegetables like chopped peppers or zucchini to the skewers. Serve with a side of savory chutney and some toasty naan bread and you have a meal fit for an Indian-inspired menu.

Ingredients

  • 4 potato, cut into big bite sized pieces

  • 2 qt water

  • 1 tbsp salt

  • Tandoori Marinade:

  • 1/2 cup vegan yogurt

  • 2 cloves garlic

  • 2 tsp Tandoori BBQ

  • 1 tsp salt

  • 1/2 lime

Notes

Choose small baby potatoes for this recipe, as they cook faster and are easier to skewer. You can also use regular potatoes, but make sure to cut them into small pieces.

Soak the wooden skewers in water for at least 30 minutes before using them. This will prevent them from burning in the oven or on the grill.

You can use store-bought vegan yogurt or make your own by blending soaked cashews, water, and lemon juice until smooth.

Make sure to mix the spice mixture well to ensure that the potatoes are evenly coated.

If you want a spicier flavor, add some chopped green chili or chili powder to the spice mixture.

For a creamier texture, add some coconut cream or coconut milk to the marinade.

If you're grilling the skewers, make sure to oil the grill grates well to prevent the potatoes from sticking.

For a more authentic taste, cook the skewers in a tandoor oven or on a charcoal grill.

Instructions

Cook potatoes for 15 mins in boiling water until just tender.

Whisk together the marinade in a medium mixing bowl.

Drain and rinse the potatoes with cold water. Transfer to the bowl with the marinade. Toss well until the potatoes are well coated. Allow to sit 30 mins covered.

Build skewers with about 5 pieces of potato per skewers. Place on a lined sheet tray.

Cook in an air fryer for 15-20 mins at 425 F. Serve with your favorite chutney!

Alternatives & Substitutions

  • You can also add some vegetables like bell peppers, onions, or mushrooms to the skewers for added flavor and nutrition.
