This simple recipe for Tandoori Beef Skewers is a great way to experience the exotic flavors of India in your own kitchen. Tandoori cooking is a traditional Indian method of preparing meats, fish, vegetables and even baked goods using a tandoor, a cylindrical clay oven with a cone shaped lid that has been used in Indian cooking for centuries. It is typically heated from the inside by a charcoal or wood fire and the thick, heavily insulated walls create an intense heat that can reach up to 500 degrees. The food is placed directly on the walls of the tandoor or on skewers that are then suspended from the top of the oven. The intense heat from the tandoor helps to lock in the food’s flavor and moisture, resulting in a crisp exterior and a juicy interior with a unique smoky flavor.
Our Chefs used our unique Tandoori BBQ blend to create this delicious recipe for Tandoori Beef Skewers. This unique blend is an amalgamation of warm spices like ginger, cumin and turmeric with a fragrant touch from spices like cardamom, cinnamon and cloves. We use dried beetroot to naturally add color instead of dyes. The beef is marinated using a traditional blend of yogurt, fresh garlic and spices, tenderizing the meat and while the spices provide bold flavor. We serve the skewers with fragrant coconut rice and a refreshing and cooling raita, an Indian yogurt sauce.
Tandoori Beef Skewers
2 lbs sirloin beef steak, cut into 1 inch pieces
2 Tbsp greek yogurt
1 Tbsp Piquant Post Tandoori BBQ
1 clove garlic, grated or finely minced
1 tsp salt
Vegetable oil, to coat beef skewers
Wooden or metal skewers
Coconut Rice
1 cup jasmine rice, rinsed and drained
1 cup coconut milk
1 cup vegetable broth
½ tsp salt
Raita
1 Tbsp fresh mint, chopped
1 small cucumber, seeds removed and grated
½ tsp fresh ginger, grated
1 Tbsp lime juice, ~ ½ of a lime
¾ cup greek yogurt
To serve: coconut rice, raita, lime wedges
Soaking wooden skewers is an important step that you should not skip because it helps to keep the skewers from burning during the cooking process.
If using wooden skewers, soak them in warm water for at least 15 minutes. Meanwhile, in a medium bowl combine greek yogurt, Piquant Post Tandoori BBQ, garlic and salt. Add the beef to the bowl and allow it to marinate for 15-30 minutes.
Prepare the coconut rice by bringing the coconut milk, water and salt to a boil over Med-High heat. Once boiling, add the jasmine rice, cover and reduce the heat to Low. Simmer for 15 minutes or until the liquid has absorbed and the rice is tender.
Meanwhile, combine all of the raita ingredients in a small bowl and mix well.
Thread the beef onto the skewers then preheat a grill pan over Med-High heat. Brush the pan with a thin layer of oil and, working in batches, grill the beef skewers for 6-8 minutes while turning on each side. Set them aside and allow the meat to rest for 5 minutes. Serve the beef skewers with coconut rice, raita and garnish with lime wedges.
Tandoori cooking has been around for centuries in the Indian community. It is a unique cooking method that involves cooking skewered meats, vegetables and even cheese (paneer) in a deep, intensely hot clay oven known as a “tandoor”. The result is protein with a smoky exterior and moist interior.
If you don’t have an indoor grill pan, you can also cook the beef skewers in an oven. Preheat the oven to 350 degrees, place the beef skewers on a baking sheet lined with parchment paper and cook for 12-15 mins flipping halfway through. You can also finish under the broiler to achieve that signature char.
