Ingredients

  • For the Cassoulet:

  • 2 Tbsp olive oil 

  • 1 onion, chopped

  • 4 carrots, peeled and sliced

  • 1 small fennel bulb, sliced

  • 8 oz button mushrooms, cleaned and sliced 

  • 6 garlic cloves 

  • 1 Tbsp Piquant Post Herbes de Provence

  • 2 15 oz cans white beans, drained and rinsed

  • 2 Tbsp tomato paste

  • 1 cup tomato sauce

  • 3/4 cup water + more as desired

  • Salt and pepper to taste

  • For the Topping:

  • 1 cup bread crumbs

  • 1 Tbsp nutritional yeast

  • To Serve:

  • Toasted bread, fresh parsley and basil

Notes

You can use any oil of your choice such as avocado oil, coconut oil, or vegetable oil.

Feel free to experiment with other ingredients to add more flavor and variety to your cassoulet. Smoked tofu, vegan meatballs, seitan, or vegan chorizo can be great alternatives.

Instructions

Heat the olive oil in a heavy bottomed pot and add the onion, carrot, fennel, button mushrooms, and garlic. Sauté for 5 minutes or until some of the veggies are just starting to become tender. Add the Piquant Post Heroes de Provence, white beans, tomato paste, tomato sauce and water. Bring to a simmer and cook for 10 minutes over medium heat.

Pour into a rectangular casserole dish and set aside. Mix the bread crumbs and nutritional yeast in a small mixing bowl and sprinkle generously over the white bean cassoulet. Preheat the oven to 375°F.

Place the cassoulet into the oven and bake for 30 minutes uncovered, until the topping is golden and the filling is bubbling. 

Serve immediately with toasted bread and fresh herbs.

Alternatives & Substitutions

  • If you can't find white beans, you can substitute them with other types of beans like navy beans or butter beans.

  • Feel free to customize the vegetable mix based on your preferences. You can add or substitute other vegetables like zucchini, butternut squash, or leeks.

  • If you don't have tomato paste, you can use more tomato sauce or crushed tomatoes as a substitute. Adjust the quantity accordingly.

  • Opt for gluten-free breadcrumbs if you have dietary restrictions.
