Ingredients

  • Portuguese Roasted chicken:

  • 3 lbs chicken thighs and drumsticks

  • 4 Tbsp olive oil

  • 3 garlic cloves, diced

  • 1 Tbsp Piquant Post Portuguese Allspice

  • 2 tsp Kosher salt

  • Spiced Potatoes:

  • 2 lbs russet potatoes

  • 1 onion, sliced into crescents

  • 2 Tbsp olive oil

  • ½  Tbsp Piquant Post Portuguese Allspice

  • Salt and pepper

Notes

If time allows, we highly recommend marinating the chicken the night before for extra flavor! 

Optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.

Instructions

First, marinate the chicken. In a large zipper bag, combine chicken, olive oil, garlic, 1 Tbsp Piquant Post Portuguese Allspice and 2 tsp salt. Mix well and marinate for at least 30 mins, up to overnight.

Preheat the oven to 400 deg F.Peel potatoes and cut into 1 in cubes. Slice onion. Toss with olive oil, Piquant Post Portuguese Allspice, ½ tsp salt, and ground black pepper to taste.

Cover a large baking sheet with foil. Lay potatoes and onion on the base of the sheet. Add chicken on top, pouring any excess marinade on the meat. 

Bake at 400 degrees  for 40-45 mins, or until chicken reaches an  internal temp of 165 degrees.
