A cherished staple in American breakfast culture, blueberry pancakes evoke nostalgia and comfort, reminding us of hearty, lazy weekend brunches and family gatherings. The succulent, tart blueberries, whether fresh or frozen, are an integral part of this classic dish, offering a burst of sweetness in every bite. Our chefs add a delightful twist to a classic recipe with the addition of our Amazon Acai spice blend, highlighting a Brazilian berry with chocolate-berry notes. This Amazonian gem is more than just a fruit—it's a superfood treasure, celebrated for its distinct flavor and remarkable dose of nutrients and antioxidants. 1 cup milk
2 eggs
1 tsp vanilla extract (optional)
3 Tbsp butter, melted
1.5 cup flour
2 Tbsp sugar
2 tsp baking powder
2 Tbsp Piquant Post Amazon Acai
½ cup blueberries (fresh or frozen)
Butter for the pan
For serving - fresh berries, maple syrup
We recommend whole milk for a more delectable pancake. However, you can use skim milk or an alternative milk.
Optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.
In a medium bowl, combine the milk, eggs and vanilla. Stir in the melted butter. In a large bowl, whisk together flour, sugar, baking powder and Piquant Post Amazon Acai.
Whisk in wet ingredients until combined, do not over mix. Stir in blueberries.
Heat a nonstick pan or griddle to medium heat. Add a pad of butter. When melted, drop ¼ cup of batter onto the pan. Cook until golden brown and bubbles form on the side, about 1.5-2 minutes. Flip and cook for an additional 1.5-2 minutes. Repeat with remaining batter.
Serve immediately with maple syrup and fresh berries!
