Ingredients

  • ¼ cup soy sauce, low sodium 

  • ¼ cup water

  • 2 limes, juiced

  • 2 Tbsp brown sugar

  • 1 Tbsp fresh ginger, grated

  • 1 clove garlic, grated

  • 1 Tbsp lemongrass paste or 1 stalk fresh lemongrass, white parts crushed and minced

  • 1 tsp Piquant Post Bali BBQ

  • 1 lb chicken wings

  • For garnish: chopped cilantro and lime wedges

  • To serve: white rice and your favorite greens 

Notes

Try preparing the wings on the grill. For a crispier wing, try cooking in an air fryer. 

Instructions

In a bowl, mix together soy sauce, water, lime juice, brown sugar, ginger, garlic, lemongrass and Piquant Post Bali BBQ. Add chicken wings to a large zipper bag and pour half of the sauce over the chicken. Toss  and refrigerate to marinate for at least 30 mins to overnight. Set aside remaining marinade (cover and refrigerate if overnight).

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper to catch drippings and place a wire baking rack on top. Remove chicken wings from marinade and place on the wire rack over a lined sheet pan. Discard the used marinade. Place rack and pan into oven and cook for 30-35 mins. 

Meanwhile, prepare a glaze by heating the remaining half of the marinade (previously set aside) in a pot over Med-Low heat until thickened, about 5-8 minutes, stirring occasionally. Take care to not burn. Once reduced, remove from heat,

Remove the chicken from the oven and transfer to a bowl. Pour sticky glaze over chicken and toss to coat well. Serve chicken on a plate and garnish with chopped cilantro and lime wedges.
