In Sweden, the practice of “fika” is a social respite consisting of coffee and delicious home baked pastries. Whether it’s with warm cardamom buns, cookies, or danishes, this work break is a welcome tradition on a cold winter day (or night). Fika is a ritual of family, friendship, socializing, and comfort. It's a mindset and a mental break with companionship. Why not take up this practice with our Nordic-spiced Cardamom Orange Coffee Cake? This treat is a mildly sweet cake with a spiced streusel topping and and a sweet orange glaze drizzled over the top to finish it off.
Our version of this traditional cake is given a healthy twist by making it vegan! Instead of butter, we have plant based oil and vegan butter, and using plant based milk keeps it dairy free. Instead of eggs we have chosen to use vegan yogurt which lends a pleasant tanginess and moisture to the cake.
Cake Mixture:
1 1/4 cup plant based milk (almond, soy, etc)
1 Tbsp apple cider vinegar
1/2 cup oil
1 tsp vanilla extract
1/2 cup vegan yogurt
3 cups flour
1 Tbsp baking powder
1 cup sugar
1 Tbsp Piquant Post Orange Cardamom Spice
Streusel Topping:
1 cup sugar
3/4 cup flour
1 tsp cinnamon
2 tsp Piquant Post Orange Cardamom Spice
1/2 tsp vanilla extract
1/2 cup vegan butter
Orange Glaze:
1 cup powdered sugar, sifted
2 Tbsp orange juice
Zest of 1 orange
1/4 tsp Piquant Post Orange Cardamom Spice
This cake can be made in a variety of pans. We are using a bread pan, but a cake pan would work equally well. Use a 9” x 9” cake pan if you want to try it that way!
This cake rises sightly in the pan when it bakes, and if your pan is filled more than 3/4 full with the streusel topping it might overflow. Place a sheet tray under the bread pan to help catch and overflow streusel!
For the Cardamom Orange Cake Mix, preheat the oven to 350°F. Mix the plant based milk, apple cider vinegar, oil, vanilla extract, vegan yogurt in a medium mixing bowl. Whisk thoroughly. In a larger separate bowl, mix 3 cups of flour, baking powder, 1 cup of sugar and 1 tablespoon Piquant Post Orange Cardamom Spice. Mix well and then pour in the milk/yogurt mixture. Stir well until everything is well combined and there are no lumps. Pour into an oiled and parchment lined bread pan.
For the Streusel Topping, mix 1 cup of sugar, 3/4 cup of flour, 1 teaspoon cinnamon, ~2.5 teaspoon Orange Cardamom Spice, 1/2 teaspoon vanilla extract, and 1/2 cup of vegan butter. Mash with a fork or a small whisk until the mixture is crumbly but well combined. Press into the top of the cake mix in the bread pan evenly. Place the bread pan on a sheet pan in the oven, and bake for 1 hour. Check that the cake is done all the way through to the center before removing it from the oven. Allow the cake to cool on a cooling rack once it is done baking before removing it from the pan.
In a mixing bowl, whisk together the powdered sugar, orange juice, orange zest, and 1/4 teaspoon Piquant Post Orange Cardamom Spice Mix.. Add more orange juice if you want a thinner glaze or more sugar if you want it thicker.
Once the cake is cool and has been removed from the pan, liberally drizzle the glaze over the top of the cake. Sprinkle the top of the cake with powdered sugar. Serve and enjoy!
This is a simple coffee cake, however we think it would be absolutely delightful with the addition of berries or nuts! We love the idea of adding frozen cranberries, blueberries, or raspberries to the cake batter. Or for a crunchy version of the streusel topping, fold in 1/4 cup of chopped walnuts to the streusel mix!
