Thanksgiving is not complete without three dishes: 1) a roasted turkey, 2) cranberries, and 3) stuffing. Many of us have had the unfortunate experience of going to a relative's house and being served pre-mixed stuffing from a box. Even if you regularly cook grandma's secret stuffing recipe, sometimes you need to cook a side for someone else's party or just want a change. We've taken liberty to create a spice blend to create a Southwestern Chipotle Sourdough Stuffing.
This stuffing recipe uses celery, onion, and garlic to create a savory combo, complemented by the natural umami flavor of mushrooms. Sourdough bread is perfect for stuffing as it can develop a crust while remaining moist inside. To enhance these flavors, we use chipotle's smoky notes to add a bit of depth. We also included rubbed sage and porcini mushroom powder to round out the savory flavor profile. The result is a Chipotle Spice blend that goes equally well in this stuffing or as a rub on chicken, pork, fish, or roasted veggies! We're confident that you'll want this blend table-side for sprinkling.
1 lb loaf of fresh Sourdough (or French Bread)
4 tbsp (1/2 stick) of unsalted butter
1 medium yellow or white onion, diced
2 garlic cloves, minced
3 celery stalks, chopped
1/2 pound of cremini mushrooms, chopped
4 cups of low-salt chicken broth
1.5 tbsp Piquant Post Chipotle Spice blend (note: use less if you desire a more subtle flavor)
Salt and pepper to taste (optional)
handful of fresh coarsely chopped herbs such as thyme, sage or rosemary (optional)
Homemade stuffing makes a huge difference for your holiday table and this Chipotle Sourdough Stuffing will definitely impress your guests. We provide enough spice for to double the provided recipe so you can serve a large party.
Chipotle has a medium heat profile and adds a little smoky flavor. The suggested amount of spice will not overwhelm the dish, but if you prefer a subtle flavor, use 1 tbsp of chipotle spice instead.
When adding the broth to the sourdough, be sure to stir and thoroughly coat all the bread cubes. This will ensure that each bite delivers a soft stuffing texture. Otherwise, dries bread will taste great but end up crunchy like croutons.
Adding fresh, chopped herbs like sage, rosemary and/or thyme will add to the savoriness of the dish and complement your other Thanksgiving dishes.
Lastly, optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.
Preheat oven to 350°F. Finish all prep work then preheat a large pan or skillet on Med-High. Slice or tear the bread into 1-2" cubes. Evenly spread the bread on baking sheets or glass dishes and bake for 15-20 mins until the bread is lightly toasted and completely dry.
Melt 2 tbsp of butter in the pan then sauté the mushrooms for 5 mins until they brown. Add 1 tbsp of butter, then stir in the celery, onion, and garlic and sauté for 5-7 more mins until the celery softens and the onions start to turn golden. Add 1 tbsp of butter and any fresh herbs and the Chipotle Spice blend and stir to mix. Season with salt and pepper.
Add the broth and stir to completely mix. Remove from heat. Place the bread cubes in a large mixing bowl or container and pour the vegetables and broth over the bread. Toss to coat until the liquid is completely absorbed.
Place the stuffing in a large glass dish or baking tray and bake for 40 mins or until the bread is golden brown but still moist inside. Cool for 10 mins then serve.
You can substitute a loaf of fresh French bread if you can't get fresh Sourdough.
Chipotle Sourdough Stuffing takes time to make, but is worth the effort. But there are plenty of alternate uses for our Chipotle spice blend.
Try using the chipotle spice as a dry rub on grilled meat like chicken, pork, turkey, or steak. We also think it would go great on fish like salmon or tilapia.
Make a fresh chipotle tomatillo salsa. Use 1 tbsp (medium heat) to 2 tbsp (more heat) our chipotle spice blend instead of the dried chipotle peppers.
Sprinkle 1-2 tbsp on ground beef or ground turkey for chipotle tacos.
Add 1-2 tbsp to a pot of chili to add authentic Southwestern flavor.
Mix in 1 tsp chipotle spice blend into 2 tbsp olive oil, 1 tbsp vinegar and 1 tsp of mustard for a zesty salad dressing.
