Crispy outside and tender inside, this recipe for Chouriço and potato bites will have your dinner guests raving and asking for more. Flavored with our proprietary Portuguese-style Chourico (pronounced /sho-REET-suh/) Spice, bits of sausage, onion, and creamy Russet potatoes, then fried to perfection, every bite is full of the the smoky-savory flavors that make Portuguese Chourico sausage so popular.
Chourico, not to be confused with Spanish Chorizo, is a Portuguese sausage made from pork, spices, garlic and red wine. The primary differences between the two are that Chorizo has much more paprika (up 30% by weight!) and Chourico uses red wine and is always smoked. The Portuguese will add chourico to a wide range of recipes from rice dishes, to stews, to sandwiches to boost flavor. We created the Chourico Spice blend to provide the traditional smokiness and full umami flavor that you expect from smoked sausage without any meat (yes, the spice is vegan!), and rounded them out with savory notes, and finished with a very mild heat.
2 russet potatoes
2 Tbsp olive oil
1 medium onion
3 oz. plain sausage or ground beef
1 Tbsp Piquant Post Chouriço Spice
1 tsp salt
1/4 cup milk
1/4 cup breadcrumbs
1 egg
To prevent the mixture from sticking to your hands, lightly rinse your hands with water and keep your hands damp while forming.
Depending on your air fryer, be sure to preheat. We did not find it necessary to turn the balls half way.
Optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.
Bring a large pot of water to a boil. Add potatoes, cook until tender, about 30 minutes.
Meanwhile, heat oil in a medium skillet over Med High heat. Add onions and saute 3-4 minutes, until golden and fragrant. Add sausage (or ground beef) and saute 4-5 minutes, until lightly browned. Add Piquant Post Chouriço spice and salt. Saute for 1 minute, until fragrant. Remove mixture from heat and set aside.
Remove the skins from the potatoes and place in a large mixing bowl. Mash potatoes with a fork. Add milk and onion/sausage mixture. Mix in breadcrumbs and egg.
Shape about 2 Tbsp of the mixture into balls. Place in an air fryer at 400 degrees and cook for 15 minutes.
