Chouriço (pronounced SHO-reet-suh) is a delicious Portuguese pork sausage made with spices and red wine. As the country's most popular sausage, Chouriço is served in myriad ways: sliced rounds in savory stews; flame-grilled in backyard BBQ; or fried with eggs at breakfast. As a cousin of the better-known Spanish Chorizo, there are similarities. But the primary differences are that Chouriço is made with more garlic, is smokier in taste, and is made with splashes of red wine.
Now you can get all the authentic Portuguese flavor without searching high and low in niche markets. Use our spice blend to season ground pork, beef, or turkey to recreate the smoky, savory flavors of Portuguese sausage at home while skipping all the preservatives and salt found in processed sausage.
Using delicious roasted red peppers, garlic, onions, parsley, ground turkey and our spice blend, this Portuguese Chouriço Rice dish is a smoky, comforting one-pot-wonder. Try making a vegan version of this dish by subbing in mushrooms, jackfruit, tempeh or tofu for the meat.
1 cup drained roasted red peppers
4 tsp Piquant Post Chouriço spice, divided
1 handful parsley leaves (~1/3 cup), large stems removed
2 Tbsp butter
1 medium yellow onion, diced
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes (optional for extra heat)
1 tsp Kosher salt, divided (optional)
1 (15 oz) can fire roasted tomatoes
1.5 cups uncooked white Jasmine rice
2.5 cups chicken broth
1 lb ground turkey (or pork or beef)
1/4 cup red wine (optional)
1 (15 oz) can black beans, drained
In a food processor, add roasted red peppers, 2 tsp Chouriço spice, and a handful of parsley. Pulse a few times until chopped and well combined (but not pureed).
In a large pot or dutch oven, heat butter. Stir fry onions, garlic and red pepper flakes for 3 minutes, until translucent. Add tomatoes, 1/2 tsp salt, and roasted red pepper mix, stir to combine. Bring to a low boil and stir in uncooked rice and chicken broth. Cover, bring to a boil and simmer for 15 minutes.
In a medium pan, stir fry ground turkey with 2 tsp Chourico spice and 1/2 tsp salt. When turkey is almost done cooking, add a splash of red wine and stir in black beans. Reduce heat to Low.
When rice is done cooking, fold in turkey and beans. Serve in bowls and garnish with more chopped parsley.
