This recipe for a classic Spanish-style Garlic Chicken Wings (Pollo al Ajillo) is a perfect way to mix in global recipes without much extra effort. Originating from the Andalusia region of southern Spain, Pollo al Ajillo is enjoyed throughout Spain and indeed the world through the popularity of Spanish tapas bars and restaurants. If you don’t feel like wings, you can easily swap in thighs or leg quarters for a similar result (adjust cooking time as needed to ensure the meat is fully cooked). 

Our chefs use our unique Spanish BBQ spice blend to achieve maximum flavor alongside the garlic. Handcrafted to replicate the delicious, complex flavors found in southern Spain, this blend imbues a nutty, smoky flavor with notes of maple, aromatics like garlic, and fresh herbs. You can use this blend as a dry rub, although in this recipe we make a simple, quick marinade adding salt and lemon juice. Loads of fresh garlic will pan roast with the chicken and the resulting tangy, smoky chicken is made irresistible with the addition of a little brandy to sweeten and deepen the flavors. Save the pan sauce to mop up with crusty bread and generate loads of smiles around the dinner table.

Ingredients

  • 1 lb chicken wings

  • 2 tsp Piquant Post Spanish BBQ

  • ¼ tsp salt

  • 1 Tbsp lemon juice

  • 2 Tbsp olive oil

  • 6 garlic cloves, diced

  • ⅔ cup brandy

Notes

This sauce is so exceptional, you may want to serve with some fresh bread to sop it all up.

If you don’t have brandy, you can add whiskey, rum, wine, or apple juice. The flavor may be slightly different, however, it will still add that subtle sweetness we get from brandy.

Optional ingredients add a little character and flavor but don’t sweat it if you don’t have them.

Instructions

In a Medium bowl, combine chicken wings, Piquant Post Spanish BBQ, salt and lemon juice. Toss and marinate for 30 minutes.

In a medium cast iron skillet or pan, heat oil over Med-High heat. Once hot, add chicken and cook about 3-5 mins per side, until browned and crispy. Reduce heat to Med-Low, add garlic and saute for 2 mins. 

Carefully, add brandy and toss to coat. Simmer with a cover, with the lid partially cracked, for 10 mins, stirring halfway. 

Salt and pepper to taste and serve hot!
