'Lillikoi' means passionfruit in Hawaiian and is a favorite flavor of locals in smoothies, drinks, and shaved ice. What can be more tropical than Passionfruit? Passionfruit is highly aromatic with a lovely sweet-tart flavor and nuances of pineapple, papaya, mango, and citrus. As summer heats up, it's time to make healthy, tasty treats to us cool down. Once you see how easy it is to make these Lillikoi Lemon Blackberry popsicles with fresh fruit, yogurt, and juice, you'll ditch the store-bought bars loaded with corn syrup and whip up your own recipes in no time!

Ingredients

  • 2/3 cup of lemon juice + zest (~3-4 lemons)

  • 2.5 cups of plain (or vanilla) Greek yogurt

  • 2 tbsp of water, divided

  • 1 tsp Piquant Post Passionfruit powder

  • 2.5 cups of fresh blackberries

  • 2.5 cups of mixed berry (or plain) Greek yogurt

  • popsicle molds (or ice trays or cupcake molds)

  • popsicle sticks (or toothpicks if using ice trays)

  • plastic wrap

Notes

The easiest way to make popsicles is to order popsicle molds online from a place like Amazon, Target, or Walmart. Be sure to order popsicle sticks if your mold doesn't come with built-in, reusable sticks.

You can also use ice trays or even (nonstick) cupcake baking trays to freeze the treats. 

Optional ingredients add a little character and flavor but don't sweat it if you don't have them.

Instructions

Juice and zest lemons in a Medium mixing bowl. Whisk together lemon juice, zest, 1 tbsp water, and 2.5 cups of yogurt, set aside.

Using a blender (or food processor), puree blackberries with 2.5 cups of yogurt, 1 tbsp of water and passionfruit powder. Set aside.

Prepare your popsicles in layers. Select your mold of choice and layer one spoonful of each, alternating as you go. You can use spoon to swirl layers if desired.

If using a mold that doesn't have a built in popsicle stick holder (ie, ice tray or cupcake mold), wrap top with a tight layer of plastic wrap. Carefully cut a slit over center of each to insert popsicle sticks. Or, insert toothpick over each (if using ice trays). Freeze for a minimum of 6 hours to overnight.

Alternatives & Substitutions

  • If you don't feel like making popsicles, there are some easy alternative ways to use the Lillikoi (passionfruit) powder. 

  • Sprinkle a pinch over yogurt and granola for a lovely breakfast treat.
