Ingredients

  • 2 Tbsp olive oil

  • 2 cups mushrooms, sliced

  • 8 oz toasted walnuts

  • 1 tsp sea salt

  • 2 tsp Piquant Post French Dijon Blend

  • 1 tsp balsamic vinegar

  • 3 cloves garlic, minced

  • 2 Tbsp olive oil 

  • Black pepper to taste

  • 2 Tbsp fresh thyme, chopped

Notes

Choose mushrooms with rich flavors that complement the pâté, such as cremini, portobello, or shiitake mushrooms. Combining different mushroom varieties can add depth to the flavor profile.

Clean the mushrooms thoroughly and remove any tough stems or debris. Slice or chop them into small, even pieces to ensure even cooking and a smooth texture.

To enhance the umami flavor of the mushrooms, consider sautéing them over medium-high heat until they release their moisture and turn golden brown. This will help develop their natural flavors and add depth to the pâté.

To replicate the richness and depth typically provided by animal-based ingredients, you can incorporate umami-rich ingredients like soy sauce, miso paste, or nutritional yeast. These alternatives will enhance the savory taste of the pâté.

Once the pâté is blended to your desired consistency, transfer it to a dish or ramekins. Smooth the top with a spatula and refrigerate for a few hours to allow it to set and develop its flavors.

Heat the olive oil in a skillet and add the mushrooms. Sauté until tender and slightly browned, about 5 minutes. Set aside.

In a food processor, add the mushrooms, walnuts, sea salt, Piquant Post Dijon Blend, balsamic vinegar, garlic, olive oil, black pepper and fresh thyme.

Process until the mixture is smooth and creamy, making sure to wipe down the sides of the food processor. Transfer to a serving dish once the mixture is smooth. 

Serve with toasted bread and more chopped thyme!

Alternatives & Substitutions
