These muffins come together quickly with an oat streusel topping that adds a special touch and contrasting texture. The orange glaze is a sweet and zesty coating that cascades down the fluffy muffins to complete this quick bread and deliver a satisfying bite.

For this recipe we used Piquant Post’s Gingerbread Spice bend to add a classic gingerbread flavor profile to this two-bite treat. Our gingerbread blend amplifies the gingery notes and you can use this spice sparingly in your recipes to get great flavor. Further complementing the ginger, is a set of aromatic and warming spices like cinnamon, nutmeg, allspice and clove. Feel free to add fresh fruits like blueberries or raspberries for another layer of fresh flavor. Enjoy these orange ginger muffins for breakfast with coffee or as a light dessert after dinner.

Ingredients

  • Orange Ginger Muffin Batter:

  • 2 cups all purpose flour

  • 2 1/2 tsp baking powder

  • 1/4 tsp salt

  • 3/4 cup turbinado sugar

  • 2 tsp Piquant Post Gingerbread Spice

  • 1/3 cup olive oil 

  • 1 tsp vanilla 

  • 1/2 cup orange juice

  • 1/2 cup vanilla almond milk

  • Zest of 1 orange

  • Oat Streusel topping:

  • 1/2 cup rolled oats

  • 2 Tbsp brown sugar

  • 2 Tbsp vegan butter, chilled

  • 1/2 tsp Piquant Post Gingerbread Spice

  • pinch salt

  • Orange Glaze:

  • 1/2 cup powdered sugar

  • 2 Tbsp vanilla almond milk

  • Zest of 1 orange

Notes

Skip the topping for a lower fat version of this recipe.

Instructions

Mix together the flour, baking powder, salt, sugar and ginger spice in a medium mixing bowl. 

In a separate mixing bowl, combine the olive oil, vanilla, orange juice, almond milk, and orange zest. Stir well and add the bowl with the dry ingredients. Mix until well combined.

Pour into a muffin tin with muffin liner papers. Fill them 3/4 full. 

To make the streusel topping, mix together the rolled oats, brown sugar, vegan butter, Gingerbread Spice, and salt. Stir until a chunky texture is formed. Crumble about 1 tablespoon of the streusel topping onto the top of each muffin.

Preheat oven to 350°F. Place the muffin tray on the middle rack in the oven and bake for 20 minutes. While the muffins are baking, whisk together the glaze ingredients. 

When the muffins are done cooking, remove from the oven and allow to cool. Once the muffins are cool, drizzle the orange glaze over the top of the muffins before serving. Store in an airtight container.
