Flatbread pizza with dukkah, carrots and vegan yogurt is a delectable, plant-based and surprisingly simple recipe featuring our Egyptian Dukkah spice. An adored and ubiquitous condiment found throughout Egypt, the eastern flank of Africa and beyond, dukkah consists of crushed nuts, seeds, herbs and spices that are pounded together with a mortar and pestle and sprinkled on everything from warm pita to fruit tarts. Due to the wonderful adaptability of dukkah, we opted to omit nuts, leaving it up to you to build your preferred nut combination, and anchored our blend with sesame seeds, earthy spices, fresh herbs and a hint of smoked paprika. The blend itself is absolutely outstanding as a seasoning, and works particularly well on pizza.
Though pizza may seem like an odd choice for dukkah, foodways in the Horn of Africa are tied to the region’s history with the Italian colonial empire, and traces of Italian influence in Eritrean, Ethiopian, Libyan and Somali cuisine are prevalent. Iconic Italian dishes such as pizza, pasta and gelato have merged with the flavors and traditional dishes of the region, resulting in a deeply delicious, diverse and distinctive gastronomy that is rich in taste and creativity. For this East African style pizza, the dough is topped with dukkah roasted carrots, tomato sauce and red onion, then finished with your choice of nuts, a dollop of vegan yogurt and an extra sprinkling of the Egyptian dukkah. Quick, easy, and loaded with flavor, this flatbread pizza with dukkah is an excellent recipe for any occasion.
Roasted Carrots:
4 large carrots, peeled and sliced
2 Tbsp olive oil
2 tsp Piquant Post Egyptian Dukkah
Salt to taste
For the Pizza:
1 raw pizza dough ball
1/4 cup tomato sauce
1/4 red onion, thinly sliced
2 oz vegan yogurt
2 Tbsp chopped cilantro
1 Tbsp slivered almonds or pine nuts
Try cutting the carrots into different shapes for different effects! For a round pizza, we cut the carrots into slices, but for a longer more rectangular shaped pizza, it would be fun to cut the carrots lengthwise!
You can often find ready to use pizza dough in most good grocery stores, but if not, try this recipe.
Pre-heat the oven to 400 F. Toss the peeled and sliced carrots in the olive oil, dukkah and salt. Roast for 15-20 mins or until the carrots are tender and browned.
Allow the dough to sit at room temperature for about an hour until the dough is warm and pliable. When the dough is warm turn it out onto a floured surface. Using the pads of your fingers , pride the dough out into a circle. When the pizza crust is the desired size, place it onto a sheet pan and top with tomato sauce, red onion, and roasted carrot.
Place in the oven and bake for 5-7 min or until the pizza crust is crispy at the edges and firm on the bottom.
Remove from the oven and slice into 4-6 slices. Top with vegan yogurt, chopped cilantro and pine nuts. Sprinkle more of the Piquant Post Dukkah. Serve immediately.
Don’t want to mess around with raw dough? Try using fresh pita or other flatbread as a base for the pizza! You will need to reduce the cooking time so as to not overcook the bread, but this hack is a great option in a pinch.
