Za'atar (also zaatar) is the best Middle Eastern spice blend that you never knew you needed. Until now! Lip-smacking Tangy, earthy, nutty, with floral-sweet herbal notes, Zaatar spice goes with everything. It is easy to use as a finishing spice to top your hummus bowl, kebabs, salads or mix into the dressing, grilled lamb chops, pizzas, pita sandwiches and so much more.

Ingredients

  • 1 15 oz can of chickpeas

  • 1/2 tsp baking soda

  • 1/2 cup sesame tahini 

  • 2 garlic cloves

  • 1/2 tsp sea salt

  • 2 tsp Piquant Post Zaatar

  • 3 Tbsp olive oil 

  • Juice of 1 lemon

  • 1/4 cup to 1/2 cup cold water

Notes

The baking soda in this recipe helps the hummus become extra creamy, whether it’s added to the cooking chickpeas or to canned. It raises the pH of the chickpeas and helps them to break down to an extra creamy consistency! Read more about the secrets of perfect hummus here. 

We love to serve this hummus with a platter full of healthy delicious veggies! Feel free to change them up to feature your favorite seasonal veg!

Instructions

Open the can of chickpeas and drain and rinse well. Place the chickpeas into a high speed blender or food processor.

Add to the blender the baking soda, tahini, garlic cloves, sea salt, zaatar, olive oil and lemon juice.

Purée until smooth in your blender, adding the cold water little by little until the hummus reaches the consistency you desire.

Transfer the hummus to a serving bowl and garnish with whole chickpeas, a little more zaatar and a drizzle of olive oil. Serve on a platter with pita, and sliced fruits and vegetables such as carrots, cucumbers, bell pepper, radishes, and grapes.
