Traditional Persian Apple Stew, also known as Khoresh Sib o Gheysi, is a vibrant and fascinating dish made with beef, tart apples, dried fruits and rounded off with local spices. Stews – or ‘Khoresh’ in Farsi – are a common meal in Persian culture and are often made with a number of unique ingredients. Due to the region's abundant agricultural industry, locals have access to many fruits and vegetables in which to enjoy on their own, in desserts or combined with meats in stews. It is also quite common to find plenty of pungent herbs and aromatic and exotic spices in Iranian dishes. 

Our chefs have adapted the original to make a vegan Persian Apple Stew recipe using our proprietary Persian Advieh spice, which is an aromatic blend of cumin, cinnamon, cardamom, nutmeg, coriander, black pepper and dried rose petals. This multipurpose, seductive blend adds warmth and a distinctive Persian flair to soups, stews and casseroles. Our Chefs opted for a plant-based version of this dish by using vegan ground beef paired with the traditional apples and tangy-sweet dried apricots. You can substitute apples with pear or quince and even add legumes like split peas for heartiness. Sub in regular ground beef for an authentic meal. Serve with cooked white rice and finish for a hearty dinner and top with fresh mint in true Persian style and a dollop of plant-based yogurt. 

Ingredients

  • 2 Tbsp olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 cups vegan beef, crumbled

  • 1 cup whole peeled tomato, chopped

  • 2 tsp Piquant Post Persian Advieh

  • 1 tsp salt, + more to taste

  • 1/2 cup tomato juice

  • 1/2 cup hot water + more as needed

  • 2 apples, sliced

  • 1 tbsp flour

  • 1/2 cup dried apricots

  • To serve: cooked white rice, vegan yogurt, chopped mint

Notes

We used a vegan ground beef, like Impossible Burger or Beyond Meat. Feel free to use any vegan meat substitute that gives you a beef or lamb like texture. Seitan makes a nice replacement for this type of vegan protein!

Instructions

In a large stewing pot, add 2-3 tablespoons of olive oil, on medium-high heat, add the chopped onions, stirring occasionally, sauté until soft and golden brown. Add the minced garlic and vegan beef. Saute for a couple of minutes, stirring frequently.

Add the tomatoes, Piquant Post Advieh and salt to taste. Add tomato juice and enough hot water to just cover all ingredients . Bring to a boil and simmer for 15 minutes. 

Meanwhile, heat 2 tablespoons of oil in a large frying pan, add the apples and sauté until they are just soft and golden brown. Add the flour and toss until coated.

Add the apples and apricots to the stew, cover, and cook for 15-20 minutes on low heat. Add a little water if necessary and adjust the seasoning. Serve warm in  a bowl with rice, yogurt, and salad.
