1 sheet vegan puff pastry
4 apples, cored, peeled and thinly sliced
1 lemon, juiced
2 tsp Piquant Post Quatre Epices
3 Tbsp brown sugar
2-3 Tbsp vegan butter
1/4 cup apricot preserves

When you are ready to prepare the tart, roll the sheet out on a floured surface until the pastry is about 9” x 12”. Pierce the pastry with a fork all over the pastry. Transfer to a parchment lined sheet pan and set aside.
Toss the apple slices in the lemon juice, Piquant Post Quatre Epices, and brown sugar. Arrange the apple slices onto the pastry leaving about 1/2” border. Top the apples with beads of the vegan butter.
Place the prepared tart in the oven and bake for 30 minutes, or until the puff pastry is golden.
Thin the apricot preserves with a little but of water so it is easy to spread over the apples. Once the tart is done baking, spread with a thin glaze of the apricot preserves and serve warm.
